We went to the Palo brunch on our 4 day cruise and it was on Wednesday from 10am-noon. I do not know the exact days on a 7 night cruise. We made our reservations when we boarded the ship. You make Palo brunch ressies at the same place that Palo dinner ressies are made. You recieve the time and place when you check-in to board the ship. I have heard mention on these boards that you can now make ressies online after your cruise is paid in full. I thought it was definitely worth it. It is $10 per person and then you add your own gratuity when you sign the receipt. One part is a buffet whith shrimp, crab legs, breads, fruits, cheese, crackers, and salads and the other part is made to order items that include lunch and breakfast. The breakfast selections include pancakes, and eggs benedict, florentine, and julia (has salmon in it) and the lunch selections include things like pasta, beef, and chicken. There are also made to order pizzas and a wonderful assortment of desserts. Are you hungry now?
