Cauliflower Rice Recipes

I finally used our frozen riced cauliflower (from Trader Joes) & OMG I'm hooked! Bought 3 more bags ;)

We made this recipes, but substituted the edamame for spinach & added chicken.

What are your favorite riced cauliflower recipes?
 
I prefer mashed cauliflower over riced. Have you tried it? Cut up a head of cauliflower, steam until very tender, put in food processor with a little of the liquid from steaming, olive oil and seasoning. Process until smooth. It's so good.

Has anyone tried the cauliflower crust pizza?
 

I always use it in stir-fry. I sauté it first, then add the meat and vegetables, then the sauce. I do usually add some brown rice, too, as we need some carbs.
 
I do risotto style. ANd top with sautéed mushrooms and lots of grated cheese.
 
I fry it up like hashbrowns - some butter/oil then season with onion, salt, pepper, and some Lawry's. Serve over-medium eggs over it!

I do this with radishes, too. YUM!
 
I've used it as a pizza crust and it's pretty good.

It's also the basis of a paleo-inspired Zuppa Toscana soup recipe that my family loves.

Im excited to try the fried "rice" recipe. Now I'm so hungry!

I've roasted the cauliflower before mashing it and the flavor is great. But the color is a little off-putting...sorta grayish. Because of that I only make it that way my family not guests.
 
I often wondered about roasting then mashing.

I saw a recipe for cauliflower hummus using roasted cauliflower. It basically was substituted for chickpeas
 
I just use it for stir fry. Last night I was lazy so I just threw some soy sauce and edamame in it and had that for dinner.

I haven't made my own mashed but tried the frozen one. I was disappointed because the consistency was loose not thick like a mashed potato. I know its not the same, I was just hoping it was.
Taste was good though and I will use that for myself when the rest of the family has potatoes.

@java do you have a recipe you follow that you wouldn't mind posting.
 
We must be doing something wrong. We tried the cauliflower "rice" and didn't like it at all. We made it with lettuce wraps and it just wasn't good. It had a weird mushy texture and was really off-putting. The next night, we tried using it for mashed cauliflower and that was chunky! LOL! I think we'll stick with fresh heads of cauliflower instead of the already chopped "rice" bags of it. :confused3

Aww, man. I had bought Veggie Tots as well, cooked until crisp as directed, bit into them and holy NASTY. "Mushy" is a nice word for it. This thread had me hoping the "rice" would be a different experience.
 
I mash it and throw in white cheddar, sour cream, and salt/pepper to taste--delicious!!!
 
I tried it for the first time and actually liked it. I just put sone olive oil, and spices on it, and shoved it in the microwave for about 3-4 minutes. It was really good. I added some sweet chili sauce to it. A great side dish.

I make my own cauliflower tots and they come out pretty crisp.

What did you use for the oil?

I just sautéed some garlic in a bit of olive oil. Added the "rice" sautéed that a bit then added ladles of chicken stock a bit at a time (stir until absorbed) then add some more. Last 2 ladles I use white wine. Topped with sautéed mushrooms and shredded cheese. Mmmmm now I want some more.....
