It may not be only the chicken. Most cats are allergic to fish. Cats generally do not go in the water to fish. It is not indigenous to their diets. It is added into many cat foods as a cheaper source of protein without regard to what cat's really eat.
My vet had me switch to one flavor or Science Diet that we know is fish free. My kitty's mucousy eye problem has gone away, but she still has a yeast problem in her ears. I suspect it's due to grains. Grains = Yeast. I'll have to look into the Wellness products. It has been hard to find a cat food both fish-free and grain-free.
If you're concerned about allergies, I would recommend starting with a Grain-free product, in addition to eliminating chicken. I use Wellness canned grainfree. I had a friend who's cat was suspected of being allergic to chicken, her vet put him on venison for nearly a month. You can find venison cat food (as well as tons of other specialties) at www.petfooddirect.com.
Until you get down to the bottom of his allergy issues, I would avoid the standard commercial products found in your local grocery store. Most of them are full of fillers and by-products.
