Coming into this thread way after the fact, but I feel like chipping in.
I stock five flavors of Pixar-brand Kool-Aid in my pantry, and I thought Cars 2 was a mess. Sprawling, disjointed, and a victim of what I call "bigger!!/faster!!/louder!!" But what really killed it for me was Mater - he was a satisfactory comic relief sidekick in Cars (and let me interject - Cars isn't my favorite Pixar, but I thought it was solid and entertaining if not groundbreaking) - but I couldn't take him as the lead, especially since they had to make him such an object of pity in order to force some sort of "emotional" angle into the movie. I don't mind that he's a hick; I don't like that they made him so - I don't know what word to use, developmentally challenged? - that, for starters, he doesn't even understand the simple idea that McQueen wants some alone time with Sally. It's like he's 5 years old! (Which, I'm sure, makes him relatable to 5 year olds, but he wasn't that pathetic in the first movie.)
I will say that I don't think Cars 2 was made just for the money (although I'm sure Disney had $ in their eyes) - I really believe that John Lasseter LOVES the whole Talking Cars concept, and probably thinks Mater is a funny character, and ended up just unleashing his inner 8-year-old this time.
I do not understand the "Pixar is going downhill" thing, though. Ratatouille, Wall-E, Up, and TS3 were all brilliant and daring in their own ways (I'm actually not a big Wall-E fan, but I admire them for trying it). Brave looks promising to me - even if it's not perfect, it looks like something original and epic. I have no idea why they're doing Monsters University, but the two upcoming films most recently announced have me excited, as they are both original and being directed by my Up heroes Pete Docter and Bob Peterson. I don't even mind the prospect of TS4, if they do it well - I'm not overall in favor of sequels, but I would happily hang out with Woody & Buzz for a couple of hours every few years (thought the Hawaiian Vacation short was great!). Anyway, I'm not giving up on Pixar just yet!
