Do you have any favourite muffin recipes to share? :)

I made these yesterday. They're simple and tasty! :)


Pineapple and Carrot Muffins

Makes 12 large muffins


1 cup sugar (plus extra for crust, if desired)
2 eggs
2/3 cup vegetable oil
1 cup grated carrots
3/4 cup crushed pineapple, well drained
1/2 tsp vanilla
1 1/2 cups all-purpose flour
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon

In large bowl, cream together the sugar, eggs and oil. Add carrots, pineapple and vanilla.

In separate bowl, sift together the dry ingredients, add to wet ingredients and stir gently only until all dry ingredients are just moistened. Do not beat.

Spoon into greased muffin tins, sprinkle tops with granulated sugar (if desired), and bake in 400F oven for 15 to 18 minutes. Muffins are done when they spring back when lightly touched with a finger.
 
These are our favorites:

ORANGE MUFFINS

1 orange
1/3 c fresh orange juice
1 egg
¼ c unsalted butter, softened
1½ c flour
¾ c sugar
1 tsp baking powder
1 tsp baking soda
1 tsp salt
½ c raisins

Grate rind from orange. Remove skin and pith and any large white pieces from orange. Cut orange into 6-8 sections, remove seeds. In blender, blend rind, orange, juice, butter & egg until soupy with butter in little bits. Toss in raisins & blend 2 - 3 seconds. Pour into mixing bowl. Sift together flour, sugar, powder, soda & salt. Combine with wet ingredients - combine only, do not mix or beat. Pour into greased muffin tins. Bake at 400 for 15 - 18 min. Yield: 12 (If omitting orange, use 1½ tsp orange rind & additional 1/3 cup orange juice. If using craisins, soak first!!!

Cinnamon-Topped Oatmeal Muffins (Good for breakfast or with a meal!)
1 c flour
¼ c sugar
3 tsp baking powder
½ tsp salt
1 c oats
Topping:
2 Tbl sugar
1 tsp cinnamon
½ c raisins
3 Tbl oil
1 egg
1 c milk
2 tsp sugar
1 tsp melted butter

Combine ingredients; stir until moist. Sprinkle with topping. (Double topping is better!) Makes a dozen. Bake at 425 for 15 minutes in greased or papered cups.
 
Here is a couple we enjoy.....as well as the standard blueberry.
I do make just about any quick bread into muffins. Just did my favorite Cranberry...as muffins. Yum!

Bran Muffins

Amount Measure Ingredient -- Preparation Method

2 cups Bran Chex cereal
1 cup milk
1/3 cup packed brown sugar
1 egg
3 tablespoons vegetable oil
1 cup sifted flour
2 teaspoons baking powder
1/2 teaspoon salt

Preheat oven to 400 degrees. Coat 12 medium muffing cups with nonstick vegetable spray or shortening.
Mix together Chex, milk, brown sugar, egg and oil. Let stand 10 minutes. Stir.
Meanwhile, combine flour, baking powder and salt. Add bran mixture all at once. Stir only until moistened.
Fill muffin cups 2/3 full.
Bake 20-25 minutes or until lightly browned.

NOTES : Variations: Stir in 1/2 cup snipped dates OR prunes when adding bran mixture to dry ingredients.

Cinnamon Chip Muffins

Amount Measure Ingredient -- Preparation Method

2 cups all-purpose biscuit mix
1/3 cup sugar
2 tablespoons vegetable oil
1 egg -- slightly beaten
1 cup cinnamon chips
2/3 cup milk

Heat oven to 400 degrees. Grease or paper-line 12 muffin cups (2 1/2").
Combine biscuit mix, sugar, oil, egg, cinnamon chips and milk in medium bowl just until moistened. Spoon batter evenly into prepared muffin cups.
Bake for 15-18 minutes or until muffin tops are browned. Cool slightly. Remove from pan.
Serve warm with butter.

You know, Meriweather, I think I'll have to try these this weekend. ;) I completely forgot that I bought some mini cinnamon chips before Christmas to make cookies (got them in the "bulk food" aisle at the store) but I got sick & never made cookies. Thanks for reminding me! (Actually, DH thanks you even more! :teeth: )
