i am hosting thanksgiving for the first time this year. so i have been looking at lots of different recipes. does anyone have a favorite that they would like to share?
 
I have a ton if your interested. Cooking is one of my favorite pastimes and trying and creating new dishes is a hobby of mine some work some don't but there are always the standbys that my family love.

Turkey: I always cook my turkey in brown paper in a slow oven. It comes out tender and juicy. I season and stuff the turkey, wrap it in brown paper sealing the ends. Spray the paper with oil, then water, pop it in the oven at 300-325 depending on your oven, as the paper dries out, I continue to spray it with water. I use a digital thermometer that beeps when the turkey is cooked.
 
<center>Homemade Cranberry Sauce

2 cups sugar
2 cups water

Stir to dissolve sugar, heat to a boil: boil 5 minutes. Add

4 cups cranberries

Cook 5 minutes or till skins burst. Remove from heat. Serve warm of cold.

Note: You can also add some graded orange peals.
 
<center>Baked Butternut Squash

This is one of my families favorite.

Peel and dice squash, put into a buttered baking dish. Pour 1/4 to 1/3 cup maple syrup over squash (depending how much squash) a few teaspoons of butter, cover and cook. 350 degree over 20-25 minutes. When finished mash in baking dish and serve.

This dish can be pre-made and reheated just before serving.
 

<center>Baked Creamed Onions

Peel and boil small onions 5 min. reserve liquid.

Crean sauce:

3 tlbsp. butter
4 tlbsp. flour
1/4 tsp. salt
1 cup milk
1/2 cup onion liquid
1/4 cup mild chedder cheese (grated)

Melt butter in sauce pan, add flour stirring till mixed. Add milk and onion liquid. Cook quickly, stirring constantly unil mixture tickens and bubbles. Remove from heat and add cheese. Stir until smooth.

In buttered baking dish add onions, pour sauce over top. Bake in medium oven until lightly brown on top. Maybe 15-20 minutes.

You also can add a little white wine ( 1-2 tablesoons) to the mixture just before adding the milk.
 
This is the "must have" holiday dish for my family:

Cauliflower au Gratin

2 heads cauliflower
8 tbsp. butter
12 tbsp. flour
1 tsp. salt
4 cups milk
16 oz. cream cheese, cut into small pieces
3 cups shredded cheddar cheese
white pepper to taste

Steam cauliflower and separate into small pieces. Melt butter in double boiler. Add flour, salt and milk. Cook over low heat, stirring constantly until sauce is thick and smooth. When sauce is thick and smooth and still very hot, slowly add cream cheese. Stir until smooth. In large casserole dish, put one layer of cauliflower. Top with sauce. Sprinkle with shredded cheddar cheese. Repeat. Dot top with butter. Bake until brown.

Molasses Yeast Rolls

1 package active dry yeast
3/4 cup warm water -- (110º-115º)
1/2 teaspoon honey
1 1/2 cups warm milk -- (110º-115º)
1/2 cup molasses
1/4 cup butter or margarine -- softened
1 egg -- beaten
1 1/2 teaspoons salt
3 cups whole wheat flour
4 1/2 cups all-purpose flour

In a large mixing bowl, dissolve yeast in water. Add honey. Let stand for 5 minutes.
Add milk, molasses, butter, egg, salt and whole wheat flour. Beat until smooth.
Stir in enough flour to form a soft dough.
Turn onto a floured surface. Knead until smooth and elastic, about 6-8 minutes.
Place in greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
Punch dough down. Turn onto a lightly floured surface. Divide into 24 pieces.
Shape each into a 10" rope. Shape each rope into an "S". Coil ends until they touch the center.
Place 2" apart on greased baking sheets.
Cover and let rise until doubled, about 35 minutes.
Bake at 375º for 12-15 minutes or until golden brown. Remove from pans to wire racks.

Sausage and Apple Stuffing

Amount Measure Ingredient -- Preparation Method

6 ounces bacon -- diced
1 pound pork sausage
2 cups chopped onions
2 cups sliced mushrooms
1 cup chopped celery
1 teaspoon dried sage -- crumbled
1 teaspoon dried thyme -- crumbled
1 teaspoon salt
1/4 teaspoon pepper
3 cups tart apples -- cut in 1/2" pieces
10 cups day-old white bread -- cut in 1/2" cubes
1 cup chopped fresh parsley
1 1/2 cups chicken broth

Sprinkle bacon over bottom of 3 quart casserole. Cover with paper towel. Microwave on HIGH 3 1/2- 4 1/2 minutes until bacon just begins to brown, stirring once.
Crumble sausage meat in. Microwave on HIGH 3 minutes, stirring twice, until meat loses its pink color.
Add onions, mushrooms and celery. Cover with paper towel. Microwave on HIGH 6-8 minutes until onions and mushrooms are wilted, stirring twice.
Stir in sage, thyme, salt and pepper, then the apples. Cover and microwave on HIGH 2 minutes. (Apples will still be crisp.)
Meanwhile, mix bread and parsley in a large pot or bowl. Add apple mixture. Toss to mix.
Stir in broth a little at a time until well blended and stuffing is as moist as desired.
Return mixture to the 3 quart casserole. Cover with lid or vented plastic wrap. Microwave on HIGH 13-15 minutes, rotating dish 1/2 turn and stirring once.
Let stand covered 10 minutes for flavor to develop and to equalize the temperature.

Cranberry Salad

2 cups cranberries -- ground
1 cup sugar
10 ounces miniature marshmallows
quart Cool Whip® -- thawed
small can crushed pineapple -- drained

Mix cranberries and sugar. Let stand 2 hours.
Mix marshmallows and Cool Whip. Let stand 2 hours.
Mix cranberries and marshmallow mixtures together with pineapple. Set overnight.
 
<center>Whipped Flavored Butter's

A Pint of Heavy Cream
1/2 tsp salt

Beat until the cream separates. Drain liquid from solids. You now have homemade butter. You can flavor it with whatever you want.

Orange marmalade
Pumpkin
Cranberries

This is another favorite of my families. It's great on just about anything. Use your imagination you can make any flavor you want. Jams are a great way of favoring your butter.
 
<center>Squash Cheesecake w/Orange Glaze

Crust

1 cup flour
3 tlbsp. sugar
1/4 tsp. salt
6 tlbsp. butter
1 large egg yolk (reserve the white)

Preheat oven to 350. Mix dry ingredients together. Cut in butter till mixture resembles coarse grain. Stir in egg yolk and mix well. Using fingers press dough over bottom of 9-inch springform pan. Bake 20 minutes. Cool.

Cheese Filling

4 8-oz. Packages of cream cheese (room temperature)
4 large eggs
1 cup sugar
1 cup butternut squash (Puree)
1/4 tsp. salt
1/4 tsp. nutmeg
1 tsp. lemon extract
1 tsp. vanilla extract

Preheat oven 350. Cream cheese until soft and smooth. Add the 4 eggs plus reserved egg white, beating until smooth after each addition. Continue beating while you sprinkle in the sugar and spoon in the squash. Add the salt, nutmeg, lemon and vanilla extracts beat until mixture is creamy and smooth. Pour into crust. Bake 1 hour and 15 minutes. Turn oven off and open door several inches, allow the cake to cool in oven for 30 minutes.

Sour Cream Topping

1 1/2 cups sour cream
2 1/2 tlbsp. sugar
1 1/2 tsp. vanilla extract

Mix ingredients and cover the top of the warm cake with mixture. Bake 15 minutes in 300 degree oven. Turn off oven again, open door and allow cake to cool, refrigerate when cooled.

Orange Glaze

1 cup orange juice
1 cup sugar
1 tlbsp. grated orange peels (fresh)
2 1/2 tlbsp. cornstarch
1/4 cup water

Bring the orange juice, sugar and peels to a boil. Mix the cornstarch and water to a smooth paste, stir into the orange mixture stirring constantly over medium heat until glaze is thick and clear. Spread glaze over the cheesecake. Chill overnight.
 
Here's something to try:

My mother once mistakenly cooked the turkey upside down (breast down). Everyone raved about how juicy the bird was, until she finally confessed what happened. Now, we insist she cooks it that way every year. It always turns out great!
 
MICKEY, a couple of years ago one of the magazines up here tested all different ways to cook a turkey, and they said that upside down turned out the best. They started it out upside down and then turned it over part way through to brown the skin on the breast so that it looked good for serving.
 
Corn Puddin'

one can corn(drained)
one can creamed corn
2 eggs beaten
salt and pepper to taste
sprinkle of nutmeg

Mix all ingriedients together.Pour pudding into the buttered dish and sprinkle with nutmeg. Bake pudding in middle of oven until center is just set, about 45 minutes. Garnish pudding with chives.

Ok, a lot of people hate this, but along with the turkey, dressing, mashed taters, rolls, and pie I have to have this every year.

Large thing of Cottage Cheese. Package of Cool Whip, large package of orange jello ( I use the sugar free and do two packages), can of drained crushed pineapple. Mix together, chill and serve.

I LOVE this stuff. Don't know the real name. We just call it that orange stuff. YOu can make it with different things at differnt time. We use Lime, cranberry or black cherry jello sometimes at Christmas. You can use mandarin oranges instead of the pineapple, but I LOVE pineapple, so that is what is in it when I make it.
 
Oh, Lainy! I love that orange stuff, too, but I don't know what it's called, either. Thanks for reminding me!

Here's one of my favorite Thanksgiving recipes. It's not like the cheesy, Velveeta-y broccoli casseroles you see so often, but it sure is wonderful. Yum! I could almost eat the whole thing, myself.

Broccoli Casserole

2 (10 oz.) pkg. chopped frozen broccoli
2 (10 oz.) cans water chestnuts, diced
2 (10 oz.) cans cream of chicken soup, UNdiluted but stirred 'till creamy
2 T. margarine
2 T. bread crumbs
1/4 c. parmesan cheese

Grease a 9 x 11" pan. Put broccoli in pan. Add chestnuts and soup. Stir. Melt butter and pour over bread crumbs. Spread crumbs on top. Top with cheese. Bake at 350~ for approximately 1 1/2 hours.
 
Here's another of my favorites. This is a great side dish to have when serving a crowd. It's a wonderful fill-in dish!

Mushroom Buffet Casserole

1 lb. mushrooms
butter or margarine
8 slices white bread
1/2 c. chopped onion
1/2 c. celery, chopped
1/2 c. chopped green pepper
1/2 c. mayonnaise
3/4 t. salt
1/4 t. pepper
2 eggs, slightly beaten
1 1/2 c. milk
1 can mushroom soup
1 c. shredded Cheddar cheese

Slice mushrooms and sauté in about 4 T. butter until most of liquid is absorbed. Butter bread slices, cut 3 into 1-inch squares and place in bottom of greased shallow casserole. Combine mushrooms, onions, celery, green pepper, mayonnaise, salt and pepper. Turn 1/2 of mixture into casserole. Cut 3 more bread slices into squares and place on top of mushrooms. Top with remaining mushrooms. Combine eggs and milk and pour into casserole. Refrigerate at least 1 hour, or longer. Pour soup over casserole, then dice remaining 2 bread slices and place on top of soup. Bake at 350 degrees for 30 or 40 minutes. Remove from oven and sprinkle cheese over top of casserole and bake approx. 10 minutes longer just to melt cheese, being careful not to brown the cheese. Makes 8++ servings.
