If service hasn't done anything, I'm guessing loose wire connection. Getting towed jostled things around so it made connection, allowing things tow work. Not sure the best way to test for something like that though.
My guess as well. Could be something that is grounding out only when the car is angled (going up/down a hill) or experiencing braking/cornering forces in certain directions.

Wiring issues are the worst so hopefully it's a fluke thing and OP never has an issue again.

Chevy Bolts have a history of throwing a conditions not correct to shift message. You can either wait 20-30 minutes and it will be ok or you can pull the negative battery connection and reconnect. Chevy has not released a software fix for this despite it happening with the 2017 model year onward.

It could just be crappy software.

Hence my suggestion to keep a 10mm wrench in the car to make pulling the 12v negative battery lead a 30 second job for future “repairs”.
 

FWIW in my car normal driving can cause the cables attached to the battery to loosen over time. It's however a very old car. But it does cause electrical problems. A tightening of the cables has resolved any issues directly tied to that.
