If you have a package through Disney, anyone cancelling when you do for any reason (trip insurance or not) would get everything back except $200 (on original form of payment). If you call and rebook to different dates, you may lose any discounts, but you may only be charged a $50 change penalty (and that can be waived if your new package is more expensive)
If travel insurance reimburses you that $200 or any airfare or other expenses, that is up to the travel insurance policy. A work reason isn't usually covered unless you bought "cancel for any reason" type coverage.
ETA: If you call and take your DH off the package, you may get refunded his tickets, dining, etc. minus the change fee.
The trip insurance through Disney is only for "covered reasons"
It really only covers natural disaster, sickness, death in family, car accidents, and job loss as reasons....his boss changing a schedule would not be covered from what I can read (however, you should call and ask)
I believe that packages are out for next year (at least most of next year). You could move your package out to a date many months in the future and Disney might possibly even not charge you your change fee. If you then need to cancel later, if you cancel before final payment, then you would get all your money back from Disney (minus travel insurance cost)
Airfare, if you have it, would be a different matter
I have found Disney to be quite accommodating at waiving the penalty fee if pushing the dates back on trips. You could always have a trip next year, with hubby, to look forward to next year.
