If I book a May 2018 trip using banked points that expire April 2019(April UY) and I need to cancel that reservation eventually, will those points be thrown back into the same status so long as I cancel more than 30 days out?

As long as you cancel 31 or more days prior to checkin then you should be all good.

Banked points are moved to your next UY, the move is a final transaction and they now follow the expiration dates of that UY and can't be banked again.

Yes, April 2017 UY points that are banked into your April 2018 UY for a May 2018 vacation will be returned to your account as banked points as long as you cancel 31 days or more in advance of that May trip!!
