Canada Day recipes?

So for those who are doing something special for Canada Day, any special recipes you'd like to share?
Salads?
Desserts?
Secret BBQ sauces or marinades?

Come on now, someone out there has to be willing to share a recipe!
 
Since I'm still unsure of how our holiday and weekend are going to play out, I'm also unsure of what we'll be grilling! :scratchin

I have a chicken in the freezer, and for the longest time I've wanted to make Beer Can Chicken. Maybe this will be the weekend!! :)

Here's the recipe, courtesy of Weber's Big Book of Grilling. :)

For the rub:

1 teaspoon dry mustard

1 teaspoon granulated onion

1 teaspoon paprika

1 teaspoon kosher salt

1/2 teaspoon granulated garlic

1/2 teaspoon ground coriander

1/2 teaspoon ground cumin

1/2 teaspoon freshly ground black pepper

1 whole chicken, 4 to 5 pounds

2 teaspoons vegetable oil

1 can (16 ounces) beer (tall boy)



To make the rub: In a small bowl combine the rub ingredients.



Remove and discard the neck, giblets, and any excess fat from the chicken. Rinse the chicken, inside and out, under cold water and pat dry with paper towels. Lightly spray or brush all over with the vegetable oil and season, inside and out, with the rub.

Open the beer can and pour off half of the beer. Set the half-full can on a flat surface and slide the chicken over the top so the can fits inside the cavity. Transfer the bird to the grill, keeping the can upright. Carefully balance the bird on its two legs and the can. Grill over Indirect Medium heat until the juices run clear and the internal temperature reaches 170°F in the breast and 180°F in the thickest part of the thigh, 1-1/4 to 1-1/2 hours. Wearing barbecue mitts, carefully remove the chicken and the can from the grill, being careful not to spill the beer – it will be hot. Let the chicken rest for about 10 minutes before lifting it from the can. Discard the beer. Cut the chicken into serving pieces. Serve warm.

Makes 4 to 6 servings.

We've been eating a lot of Strawberry Shortcake lately, so I'm sure that will be on the menu too! :)

I made this last night, and thought it would be good for Canada Day. Nicely red & white!

Rhubarb Swirl

3 c. rhubarb, chopped
3/4 c. sugar
1 tbsp. butter
10g package jello, strawberry,
30g pkginstant pudding mix, vanilla
1 1/2 c. milk
4 ounces Cool Whip (1 small container, or 1/2 large)
1/4 tsp. vanilla

Cook rhubarb, sugar and butter for 10 minutes. Add strawberry Jello. Mix well and let cool. Mix pudding and milk until thickened. Add Cool Whip and vanilla. Put in a large bowl with cooled mixture and swirl. Chill well. Can be used as a dessert on a graham cracker crust.

Now then, being as I'm on Weight Watchers I modified it thusly:
substituted splenda for the sugar, becel for the butter, used the light/fat free jello and pudding, and the ultra low-fat cool whip. I had to add some water to the saucepan when cooking the rhubarb, but that was pretty much the only procedural difference.

I frankly have no idea how many servings it's supposed to make, but I'm thinking it's 6 decent-sized servings. At least we had 2 last night, and it looks like there's still 4 left.

layer a 9 by 13 pan with pound cake (I cut mine in about 1 inch thick slices)

Dissolve 2 pckgs of strawberry jello (85gr) in 2 cups of boiling water. Add in 3 cups of ice cubes. Stir approx. 3-5 minutes and remove any undissolved ice.

Add 2 cups of sliced or crushed strawberries to the jello and then pour over pound cake. Refrigerate for 10 minutes.

Cover cake with 4 cups of Cool Whip (the whole container) and set for 2 hours.

Use strawberries to make a Canada Flag design on top of cake.



I have been making this cake for the last 4 years. My family always requests it and the guests always rave over it.

Alas, no Beer Can Chicken for me this weekend. We're having 16 people join us for dinner tonight, so my one chicken wouldn't go too far! :crazy:

Hustling today, trying to come up with a new menu!!! So far, bbqd chicken and ribs, home- baked beans (they've been soaking overnight), salads, and strawberry pies. I made up three pie crusts yesterday, and I have a flat of strawberries in the kitchen waiting to be cleaned....I better get moving!!!! :eek: :)

My brother, who we haven't seen in two years (he lives in Victoria), arrived last night for a three week visit! A nice Canada Day present for all of us!! :) :)
