You can definitely use Disney Dollars at the parks and World of Disney...I'd think you can use them to pay for your room at a Disney Hotel, but if you really need to know for sure I'd suggest you call the hotel and ask.
I've never done it personally, but I believe you can pay for your room with disney dollars. You'd still have to give an imprint of a credit card when you check in for incidentals though. Yes, disney dollars can be used in the parks.
I booked the Grand Californian and all they took was CC info and said I have up until 72 hours before checking in to cancel. WDW resorts require a one night deposit upon making the reservation.

For a room only reservation you put down a deposit of one night (which is fully refundable of you cancel within a certain amount of time); For a package reservation (room, tickets, with/without dining) it is a deposit of $250 (or maybe $200).
I think because of the size and the amount of visitor's this way they know who is seriously reserving and that way leaves rooms open for those who want them.
