Can you help me with a recipe question, please?

Hi WISHers! I'm relatively new to this board, but not new to Atkins. I've done it before with very good success, but fell into old habits and have recently decided to try it again.

Anyway, I'm not a very good cook so I would love some help with a recipe I found. It's for a cheesecake and it calls for a store-bought graham cracker crust. My question is...can I make it in a pie dish without the crust? Will it set on it's own or will it be a gooey mess? Here's the recipe:

2 Pkg (8 ounces each) Cream Cheese, softened
1/2 cup of sugar (I'll use splenda)
1/2 tsp vanilla
2 eggs

Mix cream cheese, sugar, and vanilla with electric mixer on medium speed until well blended. Add eggs, mix until blended.

Pour into crust (or in my case, greased glass pie dish)

Bake at 350 for 40 minutes or until center is set. Cool 3 hours or overnight.


Do you think that will set without a crust? Seems like it would, but I'm not one to know. Also....don't laugh....is "vanilla" the same as "vanilla extract"? If not, what is it and where would it be in a grocery store?

I don't know about the filling setting up without a crust, i would assume so...but don't take my word for it!
I do know that vanilla is the same as vanilla extract.

I think it should be fine. I've made cheesecake without a crust- it had more cream cheese in it, but it was fine. The recipe I have was excellent- and I think it might be on the Atkins recipe thread at the top of this board. Anyway... I think you'll be fine! go ahead and do it!

There are various types of "vanilla" in the stores. One is imitation vanilla extract. Cheap, but blech. The other is pure vanilla extract. Definately tastes better but also costs a bit more.

MY favorite, and other's favorites (based on comments I've received from ppl who have eaten my baked goods) is the Madagascar Burboun Vanilla. It is really strong and has a wonderful aroma and flavor. I used to find it at one of my local grocery stores (baking aisle) but it's gone now. The only "convenient" place I can find it is at King Arthur Flour.com

I've done the recipe on the low carb board which does not have a crust. It set up fine. It is a larger recipe, more cream cheese, more eggs, so it may not fill your dish but I'm sure it will be good.
 
This sounds very much like the recipe for the mock danish. The only difference being the mock danish is cooked in the microwave.

My husband loves it :)
 
I found Dizneegirl's recipe for the mock danish:

Mock Danish

2 oz. cream cheese
1 egg
1 Tbs. Splenda
1 tsp. lemon concentrate
1/2 tsp. vanilla extract

Soften cream cheese in microwave. Mix cream cheese and egg thoroughly. Add remaining ingredients and mix well. Microwave on High for 2 minutes.

Should figure to about 3 - 3.5 grams of carbs for the whole thing.


Notes: I used lemon extract - don't know if they meant actual lemon juice concentrate, but extract was what I had. I softened the cream cheese for 30 seconds or so in the microwave. I also cooked it for about 2 1/2 minutes. The 2 minutes is good, but a little eggy in the middle... the 2 1/2 minutes makes it a little more "bready"... fluffier & drier. I also microwaved it right in the cereal bowl I mixed it in.


This is a single serving recipe and it is not only yummy but quick and easy. Dizneegirl has the yummiest low carb recipes :)
 
On a low carb message board site the posters just RAVE about 'Beachgirls Cheesecake Recipe'. You can find some of the recipe's HERE.

I believe that 'John from Illinios' makes a pretty mean cheesecake too --- you may want to PM him to see what recipe he uses.

I've printed that danish recipe...I think I can handle that! But that cheesecake recipe looks too complicated for me. After about five or six ingredients I get intimidated by a recipe!! :p

Thanks so much for your help everybody....I really do appreciate it! After being back on Atkins for only three days I'm down five pounds again. I really want to stick to it FOREVER this time! :D
