can you freeze mashed potatoes? make them ahead?

please tell me how. What do you add to them?I got a good deal on some potatoes and it's a nice cool morning.......thinking of making mashed potatoes.
 
In my experience, freezing changes the texture of potatoes. But, here's a tip from: http://www.idahopotato.com/faq/index.php#a31

"Can home made mashed potatoes be frozen?
Once mashed they can be frozen but will typically oxidize or turn gray in a matter of days. To help prevent this, add a small amount (tablespoon) of white vinegar or concentrated lemon juice to the mixture once cooked."
 
You could make some potato soup. It will keep for about 3 days in the refrigerator and is a frugal meal. Serve with some shredded cheese & bacon bits.
 
Yeah I don't know about doing that...I think that you would change the consistency of them...nothing like NASTY mashed potatoes...I am with the last poster...try making soups that have potatoes in them...I know I enjoy having baked potatoes for a meal...we put all sorts of things on them, veggies, meats and sometimes even pizza potatoes which are EXCELLENT!
 

I was given a recipe years ago for what a lady called "make ahead potatoes".

It is mashed potatoes, with onion powder, cream cheese and sour cream. She told me to freeze them, and then, pull them out of the freezer when I was ready for them, cover with 1/4 cup of butter, paprika, and bake for an hour.

She explained that it was a perfect covered dish to take to church dinners, because she always had some in the freezer.

I personally have never had a batch of these potatoes last long enough to make it to the freezer, but I ate hers for years, at church dinners, and they were my favorite thing there.
