Hi Princess,
All the different areas have a "quiet" (ie non themed) pool, except the Springs which is so close to the main pool this "counts" as the pool for this area (does that make sense?). There are two quiet pools open, one in the Congress Park area (with a fabulous DTD view) and the other in the Paddock (I think that's what it's called, it's the newest section).
Yes the Carriage House is up some steps from the main pool and is the building that houses check in & guest services, the food court, the shop and the bar.
The buses run to the same timetable as the other resorts. We usually found a bus came after 5 or 10 minutes though on one occasion we did wait 30 minutes for a bus to MK. The really good thing at the moment with the buses is that because the resort is not yet finished, we found the buses extremely uncrowded in comparison with the other resort buses we had been on that holiday (CBR, BWV & AKL).
When I was there they were trialling a new children's activity - something to do with being a Chef and making pizza?? It sounded like fun but it clashed with something else we were doing so we gave it a miss.
DDs love the main pool with waterslides

There is a very small one which my youngest DD preferred as it meany she didn't get submerged
Make sure you check out Community Hall and look at the cativity sheet you are given at check in - there were quizzes, a pool party and a few other things which were great fun
SSR is a really beautiful resort and I love the DTD location. We enjoyed catching the boat to OKW once to swim in their pool (cool slide) and have a meal at Olivia's

The children really liked the play area at OKW and we enjoyed a cocktail
If you have any questions please ask away. I'm no expert but I've stayed there twice now so I will try and help
