Can Illuminations be seen from resorts next to Epcot?

We have a dinner reservation at Cape May and was wondering if we'd be able to see Illuminations from there? If not, would we be able to see them from anywhere around the World Showcase, or would we need to be located in front of it?
 
No, you can't see Illuminations from Cape May. There are some places around the Epcot resorts where you can see the high parts of Illuminations, but to really see the entire show, you need to be in World Showcase in Epcot. There is quite a bit of Illuminations that takes place at water level. It isn't just high fireworks.

You can take an Illuminations cruise, or dine in Japan or the UK and try for a table that provides a view of the show. Otherwise, just stake out a spot anywhere around world showcase at the railing to watch the show. Be careful if you decide to set up in a spot at the rail to be sure that no trees or other structures block your view either forward or up high. If you ask CM's around the area, they can show you the good spots.
 
Illuminations isn't an all-fireworks show like Wishes. It consists mostly of images projected on a large globe that's on World Showcase Lagoon in Epcot, fire and water effects on the lagoon, and lighting effects on the buildings in Epcot. There are short periods of fireworks at the beginning and ending of the show.

You can see a few of the higher fireworks from some points outside of the park, but the rest of the show can only been seen inside Epcot.

The best spot to see fireworks from the area you'll be in is the bridge that crosses over from the Boardwalk.
