Can I wait 10 days to get fastpasses?

I won't bore you all with the details, but I may have to wait a week to 10 days after my fastpass window opens before I can make my fastpass selections.

I'm an on-site guest, so I'm talking about making those reservations at about the 50 day mark.

For travel in mid to late May, during a moderate time (if such a thing exist anymore) will I have any trouble getting reservations for what I want?

This would probably be for animal kingdom, if that makes a difference.

The only things I think you really need to get at the 60-day mark (and even those can be obtained later) are 7DMT, Anna and Elsa M&G, and Soarin'. AK FPs, for me, were the easiest to get and move around.

In March 2014 we booked a last minute trip less than a week before we checked in to All Star Music. Started making FP+ choices on a Sun. and kept going back into MDE during the week. We ended up with pretty good choices. TSM had nothing early but ToT did so we just hit TSM at ropedrop and used the FPs elsewhere. Same with TT and Soarin, got TT late morning and hit Soarin at RD. At AK we got EE around 10 so we did the Safari at RD, did one of the Trails then on to EE.

I can't think of anything at AK that has run out when we've been there. May is our usual time as well. The new evening show is opening by then but I don't think they have started doing FP yet and won't know if they will be available by the time you are there. But that might be something that goes quickly. However, we've never found any show that you really must have a FP for. I'm pretty sure you'll be fine.

FWIW we just booked a trip a few weeks ago for 1 week out and got everything we wanted. They weren't available the first day I looked but over the next couple of days we kept checking and got some of the harder to get FP.
