Agreed. When DF and I got engaged while at Epcot in 2012, we called them while we were there about our desired ceremony date in October 2014 (which has changed to December 2014). They wouldn't even talk to us until a year and a half out. So, basically, in May 2013, I got in touch with one of their initial sales people (her name was Kristi), and she helped me out with getting basic prices on all the elements we wanted for our Wishes wedding. It was BASIC information so that I could kind of get a working budget together. It's the "prepping" phase to get you to the point of where you're prepared to sign a contract at that "year" mark. So, by December 2013, we had signed our contract for our December 2014 wedding.
With Escape, they tell you to contact them like 10 months in advance of your desired date so that they can sort of pencil you in...but you can't actually sign a contract until 8 months out. Also, everyone's right on it all taking place over the phone. Escape is a basically a package-deal. There are very few elements you can change...therefore, there's really no reason for them to ever meet you in person during the planning stage. Even if you do pick some enhancements, say...like floral decoration at the ceremony...the arrangement and flower-type is already planned so that they can price it the same for everyone. They just tack it on to your bill. That's why they have standard bouquet choices for Escape, and you don't get to really "build" your bouquet (though you do get to add enhancements for a price--like the Mickey crystals).
Wishes is different. It's all ala carte (and more expensive!). They want to meet with you then because, pretty much, EVERYTHING is up in the air. If you want to add floral--you get to pick where it goes, how much you want to spend, the types for flowers. Your locations are more varied. You get to pick food for your reception. You even get to design your cake. That's why they meet you for that...but not for Escape. Just makes planning easier.
Escape is more "one size fits all" than Wishes...so they won't really "meet" with you while you're there.
