Can I freeze leftover canned pumpkin?

You can freeze it. I have frozen plain pumpkin (not the pie version with spices) in ice-cube size portions. It makes a great treat for your dog, if you have a dog. But you can't use the one with spices, only pure pumpkin.

I'm not sure how long in the fridge. Personally I would toss it after about 4 days being open.

Yes, it can be frozen...and I feel safe with it in the fridge for up to 3 days. (100% pumpkin)

I freeze canned pumpkin in ziplock bags all the time.

I thaw it (microwave if I forgot to take it out earlier) and toss it in with the other ingredients for pancakes. I have not used it for a pie, but it seems the same as fresh once it's thawed.
