Can I book a bounceback if only staying one night?

We are planning a Universal trip this summer at the end of August. Typically (and I've taken advantage of this before), you can book a FD BB for the next year.

We were thinking of spending one night only at a Disney Resort - Is there any reason why I couldn't book a BB for the following year if only staying one night?

Also, which resorts have been excluded from the BB? I was thinking of booking Riverside, but I know the Port Orleans resorts have sometimes been excluded.

Yes, you can book a bounceback after any number of nights. You'll find the bounceback code in the welcome/information packet in your room. Your bounceback can be for any resort & the # of nights needn't match your current number of nights, either. As far as availability, I think it's just a matter of which resort still has bounceback discounts available for the time you're looking at.

Yes. My sister and daughter both booked a bounce back when they only stayed one night.

Also, which resorts have been excluded from the BB? I was thinking of booking Riverside, but I know the Port Orleans resorts have sometimes been excluded.

Typically, all resorts are included in the BB offers. It is only certain categories that have been excluded, like Little Mermaid rooms, 3 bedroom villas, and campsites. We booked a bounce back for Riverside last August.

There are only specific dates in the future you can book. WDW Prep School facebook page has a cute video on bounceback offers and where they are located. You need to book this before you check out of your Disney resort.

You don't have to call from the room phone. You can call the bounce back phone number from your cell phone and ask for that extension. Your window of time to book the bounce back would be the morning of your check in day until midnight of the check out day, so almost two days.
