Can I add a roll-away bed in a studio or 1 bedroom villa/apartment?

No, DVC by rule does not allow roll aways, even at resorts that have them available. The only exceptions I've seen are where there was a problem with a reservation. Very early some BWV guests were able to get them but that quickly ended.
