Typically I have made a roux for gumbo using white flour and olive oil. Now, with our new diets, we are cutting out white flour. I would like to still be able to make gumbo, and the only part that we can't eat is the flour in the roux. I would like to try to make the roux using either whole wheat flour or oat flour. Does anyone have any experience with using other flours for the roux? Any thoughts on how this would turn out? Thanks.
 
Not a clue. But give it a try. I would use the wheat though. Good luck!
 
No help here either! I've always used white flour and veggie oil.
 
sorry no help from me but I would assune it might work, I love wheat pasta, a little different flavor but I love it. Let us know if you try it and if you need any testers I'll be over to try it, I love Gumbo :D
 

I found a couple of references to using Atkins Bake Mix instead of flour for an Atkins-friendly roux...
