How many special counselors your children experience is partly a function of which cruise you take and how much time your children spend in the Club or Lab during the cruise. The kids have more time to get to know the counselors on the 7 day than they do on the 3 or 4.
Also be aware that the first evening and the last evening are the busiest times so don't assume the club is always as full as it is then. I was in the club several times on our cruise when it was almost deserted and the ratios were more like 1 to 4 or 1 to 5 kids to counselors. The MAXIMUM is 1-15 or 1-25 depending on age. It really depends on the time and the activities whether they're busy or not.
I would do what I felt comfortable with and not stress out. Save the stress for what to wear or whether the plane will be delayed.
