Girls trip on a Thursday in Dec - flight lands at 6pm at MCO, if I pick up the travelers at baggage claim in a rental car, could be we at dinner by 8 if we drove straight to Contemporary?

Could you be? Sure...if the flight is on time and baggage comes out quickly. Could you be late? Also yes.

That is too tight of a timeline for me to be comfortable with.
In general, the best we've done is exiting with the rental car 60 minutes after landing. That' s during a slow time during the day.
If you have any delay in landing, exiting the plane, waiting for luggage, you will easily be late.
Best case is arriving at CG about 7:45.
