I've never had the ones at WDW, but if you search online under the term "cake balls" you'll come up with quite a bit. Cake pops are just cake balls with a lolly pop stick inserted in the bottom. They also go by names like cake truffles and cake bombs. As for the taste, it all really comes down to the ingredients. Some of them can taste yuck if the melts used for the coating are lower quality and have a high waxy quality. Better melts just taste like white chocolate and of course you could just use chocolate to coat them. The inside also matters. I know some people like basic cake balls- i.e. chocolate cake, chocolate frosting and chocolate coating, but I prefer contrasts. My most recent batch was from scraps left over from DD5s bday cake that I froze. They were blueberry pound cake w/blueberry filling and cheesecake frosting coated in higher quality melts (i.e. white chocolate flavor). I'm actually thinking about doing jack o lantern cake ball pops w/mouse ears for my girls' classes.
