Cake Flour

Can anyone help me please. What kind of flour is Cake flour, I usually use all purpose but have a receipe that I want to make that calls for cake flour and says do not subsitute. I went to 2 different grocery stores and didn't see anything that said cake flour. Is it called something else.

Thanks, I forgot I needed some sugar(I was really prepared for this) so I had to run back up to the store and I found the cake flour it wasn't on the 2 bottom shelves with all the other flour but on the top in a box. But I did google cake flour and found you could mix 2 T cornstarch in with one cup of flour and sift it 3 or 4 times.

Wow, that could be confusing! We also have self-rising flour in the US, but it's entirely different than cake flour.

To make self-rising flour, you add 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt to each cup of all purpose flour.

Talk about 2 countries separated by a common language! We have self raising flour (which has raising agent) for cakes, plain flour (like your all-purpose) which doesn't, but which you can still use for cakes, or else for Yorkshire pud etc., strong flour for breadmaking, and then speciality (like 00 pasta flour) :scared1:
