Cake Decorating Question

HI all,

I know there was an extensive cake thread just a while ago, Im making mini doll cakes for my DD's birthday...my question is...

since Im making a few of them, I want to bake & frost them the night before the party (I was going to pipe star tips to frost all over the dress), should I store the finished cakes in the fridge til the next day & take them out before the party, or is it ok to leave them out overnight? I would be using tinted decorators frosting....

Store them in the Fridge!!!!!!!
 
Store them in the freezer if at all possible. The fridge is a good second choice. DO NOT leave them out.
 
What kind of decorator's frosting are you using?


I make my own buttercream -- 1/2 butter 1/2 crisco and will leave it out overnight and it is fine. I usually do fondant work and refrigerating the fondant ruins it.

I got my recipe off cake central and while ago and the original poster said she left her's out also. A friend also does cakes and she puts hers in the refrigerator. My problem with that is if you have anything in your fridge that is strong smelling, your icing can absorb that smell.

If you are using Wilton's prepared frosting, you would have no problem leaving out.

As long as the frosting isn't homemade with milk then they are okay to leave out overnight--but wrap them loosly with plastic wrap or put a plastic cover over them. But also keep in mind the temp in your house. If you keep it warm then you need to put them in the frig or you may wake up to a mess.
 
Depends on the icing that you use. If it has no milk products in it, they are fine to sit out...I would just cover them! I decorate cakes frequently and only put them in the fridge if the icing has milk as an ingredient or if it is the whippy kind of icing. I would not put a finished cake in the freezer...I would be afraid that the condensation while thawing it out would so something wacky to the colors in your icing.

I was going to use the white Wilton Ready to Use Frosting.....I know it has to be refrigerated after opening, so I figured same w/ the frosted cakes...

I guess I should refrigerate them...I hate to have a house full of sick toddlers b/c I left their cakes out:crazy2:

I figured the easiest way to decorate the dress of the doll cake was to pipe stars all over - since there are so many knowledgable DISers here...is this a godd idea, or does anyone know anything better?

Stars are the easiest thing to do. In fact, that's the first thing they teach you in the Wilton courses! Just remember to keep the stars close together so no cake shows through! :)

Thank you! I bought the starter course materials but never took the class!;) Good point about the star placement...
And I will post the pic's...the party is not for a few weeks, but I will surely come back & share them! Its a girly party - pink and lavendar colors, DH will love it;)
