Theres a good possibility she brought her best, most experienced servers & cooks to Florida from her other locations for those first few influencer invitation only days. And now we’re getting the just trained, get experience on the job staff. Not an excuse, just the only thing that makes sense to me.
This is definitely what happens when restaurateurs open a satellite restaurant. I’m more concerned that the owner didn’t stay on site all day every day for at least the first few months on such a big investment. The investment into this restaurant is likely many many millions and she has no investors, that is a big poker bet to shove into the middle and walk away from.
