Buying the dining plan on DVC stay

So we are booked in to BLT from Feb 4 to 14/2013. We want to buy the dinning plan (or at least we are thinking about it....) But have a question...

We did the free dining during our last stay in Oct/2010 and the plan expired on check out.

BUT what we are wondering is whether we can buy 7 or 8 days on the dining plan to use over our whole stay. Our thinking is we'll spend a day shopping a day at universal, etc etc. Do you think this is possible? Or not. Idealy we'd like it start on check in and expire on checkout day.

No, you have to buy it for all nights in a reservation, for everyone in the room. You could do a split stay but it would end on the last day of the first reservation.

You would not be able to add it to your reservation until the 2013 details come out.
 
When we did the dining plan in January, we still had two QS and 2 snack credits left the day we checked out. We checked out at 10:30am and went to the parks until our ME trip to the airport at 4pm. We were able to use up all our credits even after check out. I thought the literature states the meal plan expires at midnight the night of your check out, not the midnight preceding your check out. :)

Yes credits expire at Midnight on the day you check out.
 

Since there are a couple of days you don't plan on being in Disney, you can use those credits to enjoy a signature meal where 2 TS credits are required on one of the other days. You can use a CS credit for a breakfast, a CS for lunch and then a TS for dinner too. You are able to mix and match all your credits and use them whenever and however you want till midnight of the check out day.

I like the plan if we split our stay and only want 1 or 2 nights. Otherwise, spending $1,000.00 on food for one trip for the two of us is out of our budget, especially when we have a kitchen.
