My mom has to work at 2 this year so I decided to have BRUNCH instead of Christmas Dinner so she doesn't have to miss anything-

sooo...

what should I make for
16 people??

I am going to make the Overnight French Toast in the other thread - THANKS guys!
Spiral Ham
2 kinds of Muffins
2 Meat Pies
and a fruit platter

thats all I have so far!
 
We always do a 2-part extended Christmas brunch here because we're expected at my sister's for dinner. Not all of this stuff is out the whole time - I kind of put away breakfast type stuff when I get the shrimp out & we "graze" all day. This is what we have:

Christmas Stollen
WL Strawberry Banana Bread
Cindy's potatoes
Sausage, Egg & Cheese Breakfast Casserole
AKL Frunch
Fresh Pineapple
Clementines
Crab Rangoon
Shrimp
Ring Bologna (DS doesn't like shrimp)
Cheese & crackers
Veggies & dip
Chex Mix
Cookies (if I've gotten around to making any)
 
I was ebating the cheese and cracker with pepperoni thing - as well as veggies and dip - but maybe I will do them - they never go to waste :)

What are Cyndi's Potatoes and AKL Frunch?


Can you share your breakfast casserole dish with me?
I found a reipe for Bacon and Egg Breakfast Tarts - but the actual tarts look very time consuming :)

Oops - Cindy's potatoes are the ones served at Cinderella's Royal Breakfast in the castle. Frunch is the wonderful beverage served at Boma for breakfast.

And I forgot that I make a bread pudding from one of the resorts, too.

I originally got the sausage casserole thing here on this board. As usual, I've changed it to suit what I had in the house. This is the way I made it. Oh - and I made it the evening before so that I didn't have to mess with anything in the morning.

Breakfast Casserole

½ bag shredded potatoes, frozen (hash browns?)
1 roll sausage (use any flavor sausage, maple is very good)
2 c shredded sharp cheddar cheese
4 Eggs
¼ c milk
Salt and pepper to taste

Spray the pan (I use a Misto with olive oil) and put down a good layer of potatoes. (We like the shredded better than the cubes.) Fry sausage & drain; crumble & put on top of potatoes. Sprinkle cheese over sausage. Mix eggs, milk, salt & pepper. Pour egg mixture over cheese. Bake at 350 for 20 - 30 minutes or until firm.


The original recipe called for a can of crescent rolls instead of the potatoes. You don't need to spray the pan if using the rolls.

FRUNCH
Boma, Animal Kingdom Lodge

8 oz can Lemon Juice, frozen & canned
8 oz can Pineapple Juice, frozen & canned
8 oz can Orange Juice, frozen concentrate & canned
12 oz Mango Juice
6 ounces Grenadine

Follow the package instructions on the frozen juice containers. Mix in a large bowl. Add the mango juice and grenadine. Mix well and server over ice in a tall glass. Yield: 1 gallon

Au Gratin Potatoes
Cinderella’s Royal Table, Magic Kingdom

¼ tsp garlic salt
¼ tsp white pepper
½ tsp salt (optional)
3 c milk
1 c shredded mild cheddar cheese
4 c diced & cooked potatoes
½ c flour
½ c fresh & cooked bacon bits
½ c diced onions
¼ c melted butter

Dice & cook the potatoes. Dice onions. Gather remaining ingredients. Melt butter. Add onion & sauté. Add bacon & cook for 2 minutes. Add flour & stir to make a paste. Cook for 5 minutes.

Add 3 cups milk. Stir until lumps are gone. Cook mixture 10 minutes & continue stirring. Add potatoes, cheese & seasonings. Mix until cheese is melted. Bake at 350 for 10 minutes. Serves 6

[I made this the night before also - except I didn't leave the bacon in when I added the flour to the drippings. I don't like my bacon soggy - so I just kept it separate & added it back the next morning. I gave it all a quick stir to distribute it right before putting it in the oven.

I am debating the Frunch as I HATE Mango - can you actually taste the mango in it???

Breakfast Casserole


1 pkg. (32 oz.) Regular Flavor Jimmy Dean Pork Sausage
20 eggs, lightly beaten
6 cups milk
4 teaspoons dry mustard
2 teaspoons salt
12 cups cubed bread
16 oz. (4 cups) shredded sharp Cheddar cheese
1 teaspoon black pepper
1 cup sliced mushrooms (optional)
2 medium tomatoes, seeded and chopped (optional)
1 cup thin-sliced green onions (optional)

Preheat oven to 325 F. In large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink. In large mixing bowl, combine eggs, milk, mustard and salt; stir well. Distribute half the bread evenly in two buttered 9” x 13” x 2” baking dishes. Sprinkle with half the pepper, half the cheese, half the sausage and half of each optional ingredient. Repeat layering using remaining bread, pepper, cheese, sausage and optional ingredients. Pour half of the egg mixture evenly over each casserole. Bake uncovered for 55 to 60 minutes, or until eggs are set. Tent with foil if tops begin to brown too quickly.

Note: may be assembled ahead and refrigerated up to 12 hours before baking.

Makes 12 servings

Patty - I didn't look at the frend toast recipe but I tried one of these overnights before and it was very heavy tasting and not the best I'd ever had.

How about a quiche??

I'm not crazy about mango myself, but my kids love it - so I put it in. I wouldn't say you can taste the mango particularly - and I really like Frunch. I'm sure you could either cut down the amount you put in or just skip it if you really detest mango.

One thing - none of us like things that are too sweet (I'm diabetic so I never made much that was overly sweet for the kids to get used to it.) I didn't use lemonade, but substituted an equal amount of Minute Maid lemon juice - it comes frozen.

I've also used orange-tangerine juice because it's what I had. It's always slightly different.

WendyZ - I got the grenadine in the grocery store. Just ask at customer service where they keep it.

crazyforpooh - I tried an overnight french toast recipe once & thought it reminded me more of bread pudding than "french toast." We gave it up & started using the breakfast casserole one with potatoes on the bottom - I think it's less heavy than with the crescent rolls.
 
I just talked to my mom today and she is going to bring the quiche :)

I am still going to try that blueberry french toast for the heck of it though ;)

Ithink I will try the Frunch - it does sound good (other than the mango ;)
