Brown Derby last seating

Well, the day has almost arrived- tomorrow is my 180 day mark for dining reservations!! I am planning on one afternoon/evening (non-EMH) at MGM, and I was thinking of eating at the Brown Derby that night. My mom and I do not plan on seeing Fantasmic! and I thought that we might be able to get in a few attractions while everyone else was lining up and eating for Fantasmic! Ok, that was long-winded and probably not that important- but how do you think that logic sounds? On to my question...if MGM clsoes at 7:30 that night, what is the last seating time the Brown Derby will take? I would like to eat as close to park closing as posisble to maxamize park time.
