Broccoli casserole

I don't have just a plain broccoli casserole but I do have a really yummy broccoli corn casserole. Me and my dd's can eat the whole casserole in one sitting. If you would like that recipe I would be glad to post it.

Broccoli Casserole

Ingredients(ingredients are in all lower case, except Tbsp. and brand names)
1 can cream mushroom soup
1/2 of a medium onion diced small
1 egg
2 Tbsp. Mayonaise
20 oz chopped broccoli cooked

Mix together the above ingredients to the broccoli.

Pour into a Pam coated baking dish. (8 X 8)
2 cups Pepperidge Farm Herbal stuffing
½ cup butter

In a separate bowl mix
2 cups Pepperidge Farm Herbal stuffing and½ cup butter.
Mix well and put on top the casserole.

Directions (paragraph style – be sure all ingredients and cooking times are included)
Bake for 35 minutes at 350 degrees.
 
Here's my favorite recipe for broccoli casserole, given to me years ago by a coworker and made many times since.

Broccoli Casserole

2 (10 oz.) pkg. chopped frozen broccoli
2 (10 oz.) cans water chestnuts, diced
2 (10 oz.) cans cream of chicken soup, UNdiluted but stirred 'till creamy
2 T. margarine
2 T. bread crumbs
1/4 c. parmesan cheese

Grease a 9 x 11" pan. Put broccoli in pan. Add chestnuts and soup. Stir. Melt butter and pour over bread crumbs. Spread crumbs on top. Top with cheese. Bake at 350~ for approximately 1 1/2 hours.
 
That sounds YUMMY Spinning. I'm going to have to try this one.
 
Sorry it took me so long to get back to this, but heres the recipe.

Broccoli Corn Bake

16 oz. can cream style corn
10 oz. pkg frozen broccoli, cooked and drained
1 beaten egg
1/2 cup coarse cracker crumbs
1/4 cup chopped onion
1/2 tsp salt
dash of pepper
1/2 cup grated cheddar cheese
3 tbl melted butter

Topping:
1 cup bread crumbs
2 Tbl. melted butter

Combine ingredients in a lightly greased casserole dish. Cover with the topping and bake in a 350' oven for 35-40 minutes.


I probably would have never tried this recipe if I hadn't eaten it first at my sister in laws house. We have this at every family get together now. Hope someone can use it.

Chicken Broccoli Casserole (aka Chicken Divan)

1¼ lb fresh (or 20oz frozen) broccoli, chopped & cooked
4 - 6 c cooked chicken, coarsely diced
6 Tbl butter or margarine
6 Tbl flour
2 tsp salt
¼ tsp pepper
3 c milk
½ c mayonnaise
1 tsp lemon juice
1 c Cheddar cheese, grated
2 Tbl butter or margarine, melted
½ c bread crumbs

Grease a 9x13 baking dish. Make a layer of broccoli, then chicken. In a saucepan melt 6 Tbl butter; stir in flour, salt & pepper. Add milk gradually, stirring until it comes to a boil. Remove from heat.
Combine mayo & lemon juice with white sauce & pour over chicken/broccoli. Sprinkle with cheese. Combine 2 Tbl butter & bread crumbs; sprinkle over all. Bake at 350 for 25 - 30 min.
 
Here is one my kids love:

2 20oz. pkgs frozen broccoli (cuts or florets)
1 lb velveeta cheese
1 sleeve crushed ritz crackers (save a little for top)


Boil broccoli until cooked. Melt velveeta cheese with milk (can't remember amount of milk, should be on velveeta pkg). Drain broccoli and put in casserole dish. Pour velveeta cheese over broccoli and add crushed ritz crackers. Mix all together and sprinkle top with additional crackers. ENJOY!!!
 
I make one almost like spinnings only without the stuffing and I think it calls for 1/2 c mayo, and you make it in layers putting cheese in between the layers and topping it with breadcrumbs.

Spinnings sounds yummy will have to try that one too.
