Mamaw's hashbrown casserole:
Hash Brown Casserole
1 stick butter - melted
2lb bag frozen hash browns - thawed
1/4 cup finely minced onion
1 tsp each salt, pepper, garlic & onion powder
2 cups Cracker Barrel Cheddar Cheese - grated
1 can cream of chicken (or cream of mushroom) soup
Preheat oven to 350˚. Spray a 13x9 casserole with cooking spray. Melt the butter in the microwave. Grate the onion
and the cheddar cheese. In a large bowl, mix the butter, onion, seasonings, 1 1/2 cups of cheese and soup. Gently
stir in thawed hash browns. Pour into the greased casserole. Cook for 30 - 45 minutes or until golden brown on top.
Top with remaining cheese and bake another 10 - 15 minutes.
