I was reading another thread about Christmas traditions and a few people wrote that they make an easy breakfast casserole for the morning. I'm all for starting that tradition. Does any one have any recipes to share?
 
Here's one. I haven't made it myself, but a co-worker has made it several times and brought it into work. It's delicious and doesn't last long:thumbsup2

Overnight Blueberry French Toast

Yields: 10 servings

"This is a very unique breakfast dish. Good for any holiday breakfast or brunch, it's filled with the fresh taste of blueberries, and covered with a rich blueberry sauce to make it a one of a kind."
INGREDIENTS:
12 slices day-old bread, cut
into 1 inch cubes
2 (8 ounce) packages cream
cheese, cut into 1 inch cubes
1 cup fresh blueberries
12 eggs, beaten
2 cups milk
1 teaspoon vanilla extract 1/3 cup maple syrup

1 cup white sugar
2 tablespoons cornstarch
1 cup water
1 cup fresh blueberries
1 tablespoon butter

DIRECTIONS:
1. Lightly grease a 9x13 inch baking dish. Arrange half the bread cubes in the dish, and top with cream cheese cubes. Sprinkle 1 cup blueberries over the cream cheese, and top with remaining bread cubes.
2. In a large bowl, mix the eggs, milk, vanilla extract, and syrup. Pour over the bread cubes. Cover, and refrigerate overnight.
3. Remove the bread cube mixture from the refrigerator about 30 minutes before baking. Preheat the oven to 350 degrees F (175 degrees C).
4. Cover, and bake 30 minutes. Uncover, and continue baking 25 to 30 minutes, until center is firm and surface is lightly browned.
5. In a medium saucepan, mix the sugar, cornstarch, and water. Bring to a boil. Stirring constantly, cook 3 to 4 minutes. Mix in the remaining 1 cup blueberries. Reduce heat, and simmer 10 minutes, until the blueberries burst. Stir in the butter, and pour over the baked French toast
 
Does anyone have one with eggs - like as the main ingredient of the casserole?
 

I usually make breakfast burritos, but the last couple of years I've also made sausage biscuits and gravy. My family LOVES it and can't get enough. I use the frozen biscuits (I think they're Pillsbury) that you just pop in the over for 10 minutes or so. Here is the gravy recipe. It isn't healthy, but my oh my it is a wonderful holiday breakfast!

Sausage and Biscuit gravy

1 tube ground breakfast sausage
2 tablespoons butter
4 tablespoons all purpose flour
3 cups cold milk (I use skim)
Salt and pepper to taste

Sauté the sausage until it is cooked and has released as much of its fat as possible. Remove the sausage with a slotted spoon and do NOT drain the grease. You’ll need it to make the roux. You should have about 2 tablespoons of rendered pork fat. If not, increase butter by 2 T. Add the butter and melt it. Then add the flour a little at a time over medium heat, constantly whisking. Cook for about 2-3 minutes. Start adding the cold milk a little at a time, whisking incessantly. It will be thin at first, but keep whisking and it will thicken. Toward the end of the milk add the sausage back in. When you reach the desired consistency add salt and pepper to taste. Cut the biscuits in half, pour the gravy over them. A true comfort food if ever there was one!
 
My mom always made "breakfast pizza." DBF and I just do it from memory without any specific directions.

grease 13"x9" dish
Unroll croissant dough (pillsbury or whatever brand) in the bottom of dish
mix up eggs and bit of milk, like scrambled eggs,and pour over crust
sprinkle in sausage or pieces of ham (or both) that you cooked prior
sprinkle cheese over.

bake until croissant crust and eggs start to brown, not sure what heat but probably 350-375 is going to be decent.
 
The classic b'fast casserole that we always have:

6 eggs, slightly beaten
1 lb sausage, mild or hot
1 cup sharp cheddar cheese, grated
2 cups milk
6 slices bread, cubed
1 teaspoon salt
1 teaspoon ground dry mustard

Fry, crumble, and drain sausage. Spread bread cubes evenly on bottom of greased 9x13 baking dish. Combine sausage with eggs, milk, cheese, salt, and mustard, and pour over bread. Cover and let stand in refrigerator overnight (at least 8 hours). Bake at 350 degrees for 45-60 mins. Cut in squares and serve.

Note: Cubed ham can be substituted for sausage, but then salt should be omitted. Sauteed diced onion and green pepper (1/2 med onion, 1 green pepper) can also be added if desired.

Oh, and I have a Redwall cookbook from the young adult book series, ha, but it has a good breakfast dish.

Crispy Cheese'n'onion Hogbake

ingredients:
2 med chopped onions
2 cups grated cheddar cheese
4 eggs, beaten
3/4 cups milk
salt and pepper for taste
1 1/2 cups cornflakes crushed
4 tomatoes, sliced

1. preheat oven to 350 degrees
2.place the onions in the bottom of a large casserole dish. sprinkle the cheese over the onions, pour in the beaten egg and milk and season with salt and pepper.
3.sprinkle the cornflakes over all and arrange the slices of tomato to cover.
4. bake in center of oven for 40minutes.
 
I just want to say how impressed I am with all you breakfast casserole people. I just make the Pillsbury cinnamon rolls out of the tube and some scrambled eggs.

I'm feeling a tinge of Chrismas Breakfast Inadequacy coming on and will leave the thread before I start thinking I have to be wonderful, too. :)

I'll post my recipe when I locate it. :upsidedow I've done a breakfast pizza and sometimes as a fun side or snack, I'll make a "fruit pizza" with a cookie dough crust.

This looks like just what I was looking for. I should have some left over ham from X-mas Eve. Thanks for all the responses. I think I'll have to start cooking breakfast more on the weekends. They all look really good.:thumbsup2

Pooh's Breakfast Lasagna:
From Crystal Palace breakfast buffet w/Pooh characters

Ingredients:

Pastry cream
1 1/2 tsp vanilla extract
6 x egg yolks
1 1/2 cup milk
1/4 tsp salt
1/4 cup all-purpose flour
3/4 cup sugar
6 x pancakes
6 x waffles
1 lb strawberries
8 oz blueberries


Method:
In a 2 quart saucepan, combine sugar, flour, salt and milk over medium heat and cook stirring until mixture thickens. In a small bowl with a fork, beat egg yolks slightly, beat small amount of milk mixture into yolks. Slowly pour egg mixture back into milk mixture. Stirring constantly, cook over medium low heat until mixture thickens. Remove from heat and stir in vanilla extract. Chill cream until ready to use.

Put a thin layer of Pastry cream in a pan, make a layer of waffles, put a layer of pastry cream. Cut strawberries into slices. Take half the strawberries and half the blueberries and make a layer of fruit. Top the fruit with a layer of pancakes, then layer of pastry cream. Garnish the lasagna with the rest of the strawberries and blueberries.

Bake in a 350 F. oven for 20 minutes.
