We bring Myoplex Lite Cappuccino Protein powder. Blended with hot water, a little milk (we use non-fat creamer powder in a pinch) and a little sf chocolate pudding, it makes a rich, thick, healthy and filling breakfast drink.
Good question, I'm debating what to bring/buy also. I'm thinking nutrigrain bars, poptarts & bagels but looking for other ideas. I've read of others bringing cereal and buying milk there or oatmeal packets they make with hot water from the coffee maker but then you have to pack bowls & spoons.
We just bring some of the regular boxed breakfast foods: Nutrigrain bars, Pop Tarts, granola bars, things like that. They're easy to pack and easy to eat while we're trying to get ready for the parks in the mornings.
We bring pop tarts, nutrigrain bars and fruit cups. My DD8 likes applesauce cups. You could also bring instant oatmeal and disposble bowls and spoons.
You could use the inroom coffee maker for hot water.

We arranged a grocery delivery from Gooding's (www.goodings.com). One of our breakfast staples was bagels, which we ate with cream cheese, butter, jelly, or American cheese. We had yogurt and of course milk (not mixed together!). We had packets of instant oatmeal and added water heated by the in-room coffee maker. We also had some fresh fruit. That's pretty much what we did with the kids, ages 5 and 2.5, for breakfast every morning. There was one morning when I went to the food court to get take-out mini-Mickey waffles and bacon for the kids, but they just nibbled on little bits of their waffles (which we'd really hyped prior to our trip) and ate their bagels.
