break mid week or arrival day?

We arrive on mother's day at 11:20 am MCO and are staying at POR. right now I have no park planned that day. just dinner at 1900 park fare. I started thinking that maybe it would be a good day to do Animal Kingdom instead since it is opened until 7 and then a resort day mid week to recharge? opinions?

I had kids ages 6 and 9 last time we were at Disney. We like to get going as soon as we get there after the long trip. so if it were me I would save the break for mid week.
