did someone say they have this book? what do you think of it?
do the recipes use a bread machine?
I don't like the way the bread tastes from the machine. I am going to try not using it, but all that kneading discourages me!!

I don't make bread as often as I used to (and I don't have that particular book) but don't let the kneading put you off.

First, with the initial step use a wooden spoon to beat the daylights out of the thin batter (five minutes). That sets the stage for the kneading that comes later.

Kneading by hand for a solid ten minutes is beyond therapeutic! :teeth:

If you don't want to do all that, then yep invest in a good mixer (we have the KitchenAid and it works very well) to do the work for you.

Not much better in this world than your own bread!

(I've never used a bread maker but have seen "loaves" that emerge. I had to be told what it was)! :rotfl:

It is wonderful and very easy. Does not taste like bread machine bread. To test it out go to their website and try one or two of their basic breads. You make enough dough to make four loaves and it will keep for upt to two weeks in your refrigerator. Once you make the dough it does only take five minutes minus some rise time.

I made their Boule a few weeks ago and it was to die for! The book is on my wishlist now. I found the Boule recipe online.

I also knead the bread in my Kitchen Aid but I have used the bread machine to knead as well. As long as I dont bake it in the bread machine I am usually pretty happy with the results
