I want to make bread!!! Does anyone have a good low-carb bread recipe for a bread machine? I'm looking for something simple, but good - I don't have a lot of special ingredients like soy flour, almond flour, wheat protein isolate (whatever that is!). All I have is carbsense bake mix (0 carbs) and some wheat gluten that just came in the mail today (but I don't know what to do with it - why did I order???). Any way to make a bread with either of these? Oh, I also have milled flax seed too.

Have you tried looking on any of the low carb recipe pages? They might have something

Yes, I have looked there for bread recipes - all that I've seen have the ingredients that I listed in my original post - things that I've never heard of before & things I know my family won't eat in a bread! I'm just looking for a simple "mock-white" bread that my whole family will like & eat (kids will NOT eat wheat, bran, oat, etc. - just white). I had a really awesome bread machine recipe from pre-Atkins - do you think I can just substitute the white flour with the Atkins bake mix? The rest of the ingredients seem ok - water, egg, butter, yeast & a little sugar to feed it.

I have recipes for low carb bread but they are just YUCKY

Thanks! I will try again today! Yesterday I experimented and it came out awful - into the trash it went!! (saved me on carbs!). I'll try & modify it for dinner again tonight. I just hate wasting the bake mix - it's so expensive!! For some reason all the LC bread recipes I've tried come out with a rubbery, chewy texture. I'm not sure what's causing that - wheat gluten perhaps? I may end up compromising and using 1 c. white flour (24 carbs) with 2 c. bake mix (0 carbs) (I have the Mini-carb version). If I can slice it in 10 slices, that would only be 2.4 carbs per slice. I would just have a half slice, but hopefully, it will make the rest of my family happier. They are the ones that are protesting for homemade bread (I used to make it every night for dinner before Atkins!!)

A big bonus to Atkins is that it keeps me in the kitchen more. I never really was a "cook", but now I find it's fun experimenting with different recipes. I'm learning A LOT about food :)

Thanks for your help!
