With that do I have to stay the same dates or is it as long as I stay by the last date I'm staying this year? i.e. ill be leaving Disney 10/17. if I stay 10/16-10/25 next year will it work? What resorts can I chose from at that time.

With Free Dining, as long as your check in date falls within the offering dates you're good to go.

What resorts can I chose from at that time.

I don't believe any resorts were excluded, just some dates. I am not sure of the exact blackout dates.

We just booked the bounce back & it runs until 10/01 for 2016, so you'd have to at least start your next stay on 10/01.
