How much bottled water can I carry on - is there a limit? Can I put any bottled waters in my checked luggage?
 
Any beverages brought on board are to be carried on. No limit other than what you can handle between boarding and your cabin being ready.

People will report that porters will take it - but they do not work for DCL (they work for the port) and will slap a tag on anything to ensure a larger tip. If you check it despite knowing DCL’s rules and it breaks (yes, plastic bottles can break) and damages anyone else’s luggage, you will be responsible for the cleaning and/or replacement of the damaged belongings.
 

Isn't the water on ship higher quality than the bottled city tap water?
The water onboard the ships (from the tap) is processed the same as most bottled waters (reverse osmosis and filtered).

Whether that's "higher quality" or not depends on your point of view.
 
Personally I like the water on the ship. But bottled water can come in handy. We bring a couple bottle with us, and refill them with ship water and store in the fridge.

We bring refillable water bottles and fill them with ice from the drink station on deck and just keep refilling from the tap. On some really hot days, after returning from an excursion, I was able to drink and refill my water bottle 3 times before the ice fully melted. Sometimes it was all I could think about as I was re-boarding the ship. We usually had our water bottles with us and we went up on deck first before heading down to the cabin. When you're sweating and starting to feel dehydrated, ice cold water is the most glorious thing.
 
I bring a couple bottles of Smart water, a six of beer and a bottle of wine. I figure if I drink the water at the dinner table then drinking the faucet water is the same.
 
No need to bring on plastic bottles filled with water, the water on the ship is safe and tastes good. Be kind to the environment. If you feel you need a water bottle, bring on a metal refillable one. Save money and be environmentally friendly.
 
I thought I read somewhere that they stock the room with drinks or is that just a concierge perk?

Can that soda be swapped out for water if requested?

We'll probably also want all the snacks swapped out for fresh fruits and nuts if that is possible.

You can probably request the initial stocking be just water. Do that via shoreside before you sail. Refills come from the lounge. There is bottled water available there all day.

Snacks are not pre stocked in the room, but you will often get a fruit plate as a welcome. Food is available all day in the lounge and they rotate the options. I have had a hard time finding nuts on board, so if you want them to munch on, I'd bring your own. Fruit is plentiful though.
