Why, for example, when booking a ressie do i see my 5 nights at the poly, then at 8 am EST, when i hit enter to book, night one magically vanishes and i'm out of luck???....

If Poly, I assume you are talking about reserving 7-months out since Poly studios have seldom if ever demonstrated a problem of booking full quickly at 11-months out. If you are trying for Poly now with the 7-month window, that would mean for time that included Presidents' Day, a fairly high demand time; moreover that week runs into the Princess half Marathon weekend which is the highest DVC demand time that exists between mid-Jan and late Sep.
What you are likely seeing as open days are days that have actually reached being close to being filled before 7-months out. Thus, it may take at most only a couple hits at 8 a.m. to reach being filled, and the winners are simply those whose computers connect fastest with Disney's computers. You can also get a progression. The first day you want may disappear but those after may remain a little while. That is a factor of the subsequent days still showing more check-outs than check-ins for those days, e.g., Feb 21 could have filled right at 8 a.m. today because there was only one more check-out than check-ins left. The person who got Feb 21 may have also gotten subsequent days but those are still open because checks-out still exceed check-ins for those days.
