Booking Southwest Question - release dates

We are throwing around dates for early January 2019. I like to book flights as soon as they are released and saw that flights through January 6 are released the end of May. Just as an example.....Say we ended up leaving Saturday, January 5 through the 12th. Could I go ahead and book our flight to Orlando on the 5th and then when the next batch are released go back and get the return flight on the 12th?
 
Thanks for all the info. I apologize if it's a stupid question. I've only ever booked one other flight. :)
 

I know you said those dates were just an example, but I just wanted to mention that those days would cover the Marathon weekend at Disney World. Things might be a bit more crowded, rooms harder to get, and on Saturday and Sunday roads and certain parks could be an issue--for example on Sunday, Epcot and Hollywood Studios (and also the Boardwalk area) will have runners on the course until early afternoon. Unless someone in your party plans to run the races, you might want to look at different dates. :)
 
For several reasons, it's always recommended to book Southwest flights as one-ways, not roundtrips.

Can you tell me why it's best to book one ways rather than round trips?

I'm kind of limited on early January - my daughter goes back to college January 20 plus I'm also trying to limit the # of days my youngest is out of school (7th grade). So we're looking at any thing between Jan 5th through the 19th. Is there any 7 days in that time frame that would better? I'm also trying to fly on the less popular days (Sat, Tues, Wed?) We have been before during the Marathon and didn't mind the crowds so much, we have also been MLK Day and it was very crowded (for January) over that weekend, so definitely trying to avoid that time.

If you've been before during marathon and didn't find it to be a problem, then you'll probably be just fine doing it again :)

I'm going in November. Dates are only out to November 3. I booked my flight going to MCO. Once fares are released May 31 I will book my flight home.
