booking shore excursions before sailing

we,ve always booked our cruises through DCL but this time we switched our reservation from them to AAA because of a great price and we were able to come out of a cat. 11 to a cat.8 for the same price, my question is, can we still book our shore excursions before sailing with DCL if our reservation is with AAA or does it matter since we're on the cruise anyway? thanks for any help.

I booked my last cruise through AAA and booked all the excursions myself directly with DCL.
