We are planning a trip for January 2012 and will be staying at POP. I want to go ahead and book the dates now to ensure we have a room. If a discount code or free dining comes up later will I be able to adjust this reservation or will I have to cancel this one and start over?

As to your question - yes in most case you can apply the discount to the room if available.

I would also suggest you may want to work with a travel agent that specializes in Disney travel that can take care of that for you. It will make your life easier and means you don't have to keep watching for them since a good travel agent will do that for you (at no cost to you)

Well, maybe... If you have a "room-only" reservation it would likely be a cancel and re-book to switch it over to a package deal (unless they've recently changed the reservation system).

If that is still the case, holding a room doesn't mean that you're holding something that can be switched to a free-dining deal. If they've "sold-out" all the free-dining packages at the point you would not be able to switch (but you would still have a room and you can apply room-only discounts to a room-only reservation).

If, however, you purchase a package deal right up front (room+tickets) you might have better luck and in generally you can apply new/additional package discounts. I'm not an expert on this as I usually don't purchase the package deals and I don't know how strict they are about upgrading to the dining package.
