Booking Multi-Pass Off-Site

Correct you only purchase LLMP for days you chose up to a max of 14 days in lenght. Yes you can purchase LLMP for any valid day of your ticket that you want once you hit the 3 day before your tickets are valid for use.

In MK, I really only care about 4 LLMP rides - Space Mtn, Haunted Mansion, Monsters Inc and maybe Little Mermaid.
Not sure that you would ever need a LLMP for Monsters Inc vs standby. LM sometimes could reach a 1 hour wait in standby on really busy days.

In EPCOT, other than Soarin and Turtle Talk, I believe it is all unique compared to DLR
I would not bother with a LLMP just to get Soarin or Turtle talk during an 8 day stay you could find multiple times per day for each. Maybe for Test Track when it reopens or Remey, or Frozen but that is about it.

I think you would be better served skipping MP altogether at MK. It would be a colossal waste of money at the most expensive park for it for a show (Monsters), a ride that’s a walk on all day long but for the craziest crowd days (Mermaid), and two rides very easily done during a normal day with minimal waits (Mansion and Space). Just buy SP for Tron and Mine Train, or buy for one and do the other at the end of the night. You’re just not interested in enough of the heavy hitters at MK to make it worth the money to buy MP.

At HS prioritize Slinky Dog as your Tier 1 though it will be next to impossible to prebook that as an offsite guest. Keep checking especially at 7am the day of your visit as additional inventory gets loaded then and you may see more LLs open up. Since you don’t care about Mania grab Tower as your Tier 2 if you can. Your other Tier 2 should be whatever you can get as long it’s as early. Tapping in at your first LL as early in the park day as possible will give you the best chance at booking more rides, and at better times.

At Epcot only Remy, Frozen, and Test Track (when it comes back) see consistently long lines all day and they are all Tier 1 so mutually exclusive to prebook and you will struggle to get any of them as an offsite guest. But Remy is a clone of the Paris attraction so I’m not sure you’ll want to do it anyway. Soarin can see long lines but also regularly drops to 20 min posted waits in the later afternoon that are generally more like 5 or a walk on. Spaceship Earth and Mission Space Orange are the only Tier 2s that ever really see longish waits during the day and should be prioritized. Everything else at Epcot is a walk on all day except during the worst crowd times.

I've actually never been to Disneyland Paris. It is Disneyland in California that I go to several times a month. As such, I don't need to go on Soarin as it is the same thing we have at home.

For the rides you say that it is impossible to prebook as an offsite guest, is that because there are enough onsite guests booking two weeks in advance? Is there a chance if I had a 10 day ticket and tried to book these rides 13 days in advance, on the last day of my 10 day ticket?

Granted it is January and not April, but it looks like if I purchase a 10 day ticket and reserve LLMP at the beginning of the 14 days, I should be able to get LL for the more popular rides at the end of my trip. Again, the more popular rides for me are the ones that we don't have in CA.
