OP is going in April. August is low season and it is vastly different than Spring Break in April, and it is your third point that is key - flexibility. To me, that usually equates to availablilty only at places I don't want to eat at times I am not interested in.
To sit down, relax and eat where I want, I always make ADR's in advance.
Op, doesn't sound like she has favorites, she doesn't even know what parks she will be in.
August is no longer low season, free dining is now in August and supposedly it is impossible to eat at a ts during free dining yet we went the last week in August in 2010 and ate TS each and every day. we didn't make most of our adrs until 4 days before we arrived. Now I totally admit I don't have any "must" eat at restaurants at wdw so there is no place that if I miss will disappoint me.
Op, once again I went to disneyworld.com. I played with every date from April 15th (sunday) until April 22nd (sunday). I do not know when you are going or if this is spring break but here is what I found.
1) I put in TS for 4 each day at 5:30 pm. EVERY single day came back with at least 50 choices most days had 60+ choices between the hours of 4:30 and 5:30.
2) I found Openings at Le Cellier on Sunday, Monday at 5:20pm
3) Cinderellas royal table which is supposedly sooooo hard to get into has an opening for dinner on Sunday, Monday, Tuesday at 5:20 pm.
4) Ohana, supposedly another hard to get, has an opening on Monday at 5:15 pm
Basically as of today op, you can find ts at any park at 5:30 pm for 4 people with absolutely no problem.
Now I would not try walk ups at these places but you can wait a month or two until you get your park at least picked out and still find plenty of spots to eat.
I would not stress over it. Do you have favorites that you must eat at? If not relax
Don't take my word for it, if this is the week you are travelling go to disneyworld.com and punch in some times and dates.
Op, My point is that many people travel like we do without being tied down to ADR's
Or
you could do what a lot of people do (I have my flame suit on) but beware op people here hate this.
I know many folks who simply make multiple ADR's. they don't know where they want to eat 6 months out so they make 2 or 3 in various parks and then a month out they cancel. Disney is trying to make it harder to do this but I have tons of coworkers who simply make the adrs 20 minutes apart.
