Book ahead vs book day of?

I’m planning for September and despite having been to Aulani once before I’m feeling a bit stuck on some onsite options. Is there a list anywhere of what is book on the day vs book ahead? Last time most of the community hall activities were sign up day of activities. However, I’ve seen a lot of discussion that makes it sound like some, especially the paid options, are book ahead. Any tips? This is adults only but feel free to post for family activities too as I’m sure that will help others.

The way the CM explained it to me, if it’s premium you can book ahead. If it’s free it’s the day of.
I was able to book ukulele, Mickey ears and tshirts stamping the same time. Ukulele and Mickey ears for the same day and tshirt for a different day. But I may have gotten lucky .
