anyone have or know how to get a recipe from bomo's restaurant at the animal kingdom lodge? we were just there last week and had a delicious sweet chicken soup that included apples in a thick creamy base. cannot remember the name of the soup. bomo's food was outstanding and will be a traditional stop each trip to wdw from now on. i heard that you can write to disney for recipes? is this true? and if it is, where do you write to get what you need? thanks in advance for any help.:cool:

We stayed at AKL in May '01 & weren't sure we'd like it going just by the menu. (We'd seen them online.) We ended up eating at Boma's 3 or 4 times for breakfast & the same for dinner - in 9 days. I have over 60 recipes from AKL - most of which are from Boma! Our favorites (of those I've actually made) are:
Flank Steak Marinade (used on ALL steak!)
Durban Spiced Roast Chicken Salad
Frunch
FuFu
Ginger Carrot soup
Potatoes with Afritude

here's the recipe for MULLIGATAWNY, chicken and apple soup. wrote to peggy gentry yesterday morning and got a repsonse back from the AKL culinary team by late afternoon. now that's service!

MULLIGATAWNY a soup from Boma’s at Disney’s Animal Kingdom Lodge
Yield: 8 servings

Ingredients:
6 ounces Chicken Stock, add chicken base
2 ounces Heavy Cream
1 ounce Milk
5 ounces Celery, diced
5 ounces Onion, diced
8 ounces Red Bell Pepper, diced
8 ounces Green Bell Pepper, diced
5 ounces Carrots, diced
12 ounces Apples, frozen and cut in half
1 tablespoon Curry Powder, toasted
1 ounce Honey
¼ ounce Chopped Parsley
1/16 pint Hot Sauce
1 1/16 pounds Chicken Breast, diced chunky
Roux (1/8 pound butter and 1/4 pound flour)

Method:
Melt butter and stir in flour to make a roux and set aside.

Poach chicken breast in chicken stock until ¾ done, remove, and cut diced, chunky style. Remove excess fat from the stock. Add roux, milk and heavy cream. Let simmer until thicken. Add the celery, carrots, and curry powder. Let cook until vegetables are half done. Add the remaining ingredients including diced chicken.

Let simmer until peppers are tender. Add apples at the last minute. Adjust seasoning. Add parsley when ready to serve.
 
Wow, that's great! Ms. Gentry was more than cooperative when I requested several recipes. We had a shrimp shiskabob on Memorial Day that was outstanding. She wrote back twice telling me she was having trouble finding the recipe & I figured that was the end of it. After a couple months I got another reply telling me that it had been a one time offering & how sorry she was that she couldn't help me. I was shocked that they didn't simply let it drop much earlier! (It didn't surprise me at all that it was a one time thing - they were having a terrible time keeping up with the demand!)

As it turns out, I did have the Mulligatawny recipe - I just didn't recognize the description. This was a soup that DS tried (but I didn't) & he remembered the name, so I didn't remember what was in it. I hadn't made it because the recipe I got was for a much larger quantity. (It starts with a GALLON of chicken stock.) Now I don't have to make the conversions! Thanks!

Wow! I was just thinking about their coconut and curry soup and wondering how I could get the recipe. I was also thinking of Zebra Domes, but I doubt those would even turn out *lol* Thanks for the e-mail address... I will post my recipe when they get back to me :p

I have 2 recipes with coconut & curry - one is chicken & the other is seafood. There is a Web site that I use for most of my Disney recipes - before trying to e-mail them.

Margie J who posts here has a really comprehensive site.

About the Zebra Domes - some of the ingredients were a bit unusual (at least I didn't recognize them) and I found the instructions off-putting. Come to think of it, I've never seen anyone post that they've actually tried it. :eek:

Thanks for the link Deb! The instructions are kind of weird... actually it looks a little too advanced for me. With my luck, I'd get Zebra mush or something worse :rolleyes: I'm going to give the Morroccan stew a try this weekend... I think that's the soup I was thinking of :p
