Does anyone have a recipe that gets close to the baked salmon they have at Boma's? My husband can't stop talking about it... I remember it had kind of a sweet, nutty topping -- but can't remember much more. Any ideas are appreciated! Thanks.
 
When we were there in May of '01, they had "Nut Crusted" fish 2 different nights - once was salmon, I think. The coating tasted pretty much the same, though. I had written to them to request the recipe & this is what they sent:

NUT CRUSTED MAHI-MAHI
from Boma’s

Yield: 10 servings (1 5/8 cups)

½ c Cashews, toasted and ground
½ c Pistachio Nuts, toasted and ground
5/8 c Pumpkin Seeds, toasted and ground
1/8 c Honey-roasted Peanuts, ground
1/16 c Cumin, toasted
1/16 c Coriander, toasted
1/16 c Curry Powder, toasted
1/8 c Sugar
1/16 c Cayenne Pepper

Mix all ingredients in a large bowl.

Coat the mahi-mahi with olive oil. Then coat with the nut crust. Bake at 350 oven for 20 minutes.
