I was always a big fan of the Jambalaya at Boatrights - fairly true to form and good and spicy. But then on our last trip in January 2008, the dish was completely different, with all the meats uncut atop a bed of rice, and it did not work for me. Does anyone know if this was a permanent recipe change, or did I experience something out of the ordinary for the restaurant?

There are many ways of making Jambalaya.
I grew up in Louisana in the Town known as "Jambalaya Capital of the World".
There is a Creole Jambalya made with Tomatoes-this was a
NO-NO where I was from. For the Jambalaya Contest only
Rice, Meats and other veggies (no tomato) were even considered Jambalaya-
this was the Cajun version. This was a Brown Jambalaya.

Certainly - I have had many different types. But I really did not like the version I had in 1/08, and probably won't go back this trip if that's what I should expect.

Whenever you went the last time you must have
gotten a different Chef with his own version of the dish.
The only way to get the good stuff is to visit my
hometown. Sorry, you didn't have a good meal.
Maybe next time.
