I just picked a ton of blueberries from the yard...anyone have a good blueberry buckle type recipe that si yummy>>>

I make this yummy cake all the time! I usually buy tons of blueberries when they are on sale, wash them, freeze them, then I can make the cake all winter long (I just toss the frozen blueberries right in). :cold:

Blueberry Buckle (from the Family Fun Magazine and website)

This easy coffee cake is a specialty in Maine, the nation's blueberry capital.

TOPPING
1/3 cup sugar
1/2 cup all-purpose flour
1 1/2 tsp. cinnamon
1/4 cup butter

BATTER
1/4 cup butter
3/4 cup sugar
2 eggs
1/2 cup milk
2 cups all-purpose flour
1/2 tsp. salt
2 tsp. baking powder
2 cups blueberries



Step 1
To make the topping, crumble the sugar, flour, cinnamon and butter with a fork in a small bowl. Set aside.

Step 2
Preheat the oven to 350 degrees and grease a 9-inch square pan. In a mixing bowl, cream the butter and sugar, add the eggs, one at a time, and stir in the milk. Sift the flour, salt and baking powder into a separate bowl. Gradually stir it into the butter and sugar mixture. Wash and stem the blueberries. Fold into batter, then spread the batter into the pan. Sprinkle the topping over the batter.

Step 3
Bake the blueberry buckle for 45 minutes or until a toothpick inserted in the middle comes out dry. Let cool, then cut into 8 squares. Makes 8 servings.
 
I just made this plum buckle recipe a couple of weeks ago, and it was fabulous - and I'm sure it would work just as well with blueberries:

I'm certainly jealous of your yard full of berries - the only thing my yard grows is weeds! :p
 
Augustheather97- you have the same problem I have, too many blueberries and not enough recipes :) My family will only eat blueberries if I make something with them, they won't touch them raw. These are the ones I found
Blueberry Crisp
Crust:
3cup oats 2cups brown sugar
2cup flour 3-4sticks butter
mix all together. Save about 1c for topping. Press into 9x13 pan

4cups blueberries 1 Tablespoon lemon juice (or orange juice)
1 tablespoon flour 1/4 teaspoon salt
1 cup sugar few drops of water

mix in sauce pan. Bring to boil; cover and simmer for 15 min. Pour over crust and add rest of topping. Bake at 350 degrees for 35-45 min.
